Mamamuti Sweet And Spicy Caramelised Cacao Nibs

Cacao nibs are so underrated! They’re the least processed form of cacao, affordable and incredibly nutritious. Cacao nibs are the broken pieces of roasted cacao beans and have no sugar. They have a nutty and bitter chocolate flavour. It’s a pantry staple in my kitchen!

 

These stove top caramelised cacao nibs are bittersweet and slightly spicy. The result is a crunchy, sweet and spicy wholesome treat. I love to add this recipe to chopped fruit, coconut yogurt, granola, pancakes or sprinkle on top of homemade chocolate bark. 
Ingredients (serves 4)
3 Tbsp maple syrup 
1/4 tsp cinnamon 
1/4 tsp nutmeg
1/4 tsp cardamom 
1/4 tsp ginger 
Pinch of salt 
Method 
1. Place cacao nibs in a pan. Add maple syrup, spices and salt.
2. Cook on a medium high heat for 3-5 minutes, stirring frequently until all nibs are evenly coated. 
3. Spread cacao nibs on baking paper to cool.
4. Once cooled, transfer nibs to a mason jar and store in a cool, dry place.
