The Cacao Myth Files: Does Boiling Cacao Destroy the Goodness?

If you’ve spent any time in the wellness world, you’ve probably heard this one.

“Don’t let your cacao boil.” 

Apparently, the moment your cacao gets too hot, all the goodness disappears. Really? Let’s zoom out and think about that for a moment. 

Heat has always been part of cacao’s story. 
Long before cacao found its way into our kitchens, it was already experiencing heat.

Freshly harvested beans naturally warm during fermentation. They’re dried under the tropical sun.

Many are traditionally roasted to develop the rich aromas and flavours we know and love. And for thousands of years, people have prepared cacao as a warm drink.

Heat isn’t something modern humans invented. It’s part of cacao’s natural journey. 

So what actually happens when cacao is heated? 
Like all foods, cacao changes when it’s exposed to heat. Some naturally occurring plant compounds, particularly certain polyphenols, can decrease with prolonged or very high temperatures.

That’s true for many fruits, vegetables, herbs and spices too. But that doesn’t mean your cacao suddenly becomes “dead.” Or that it loses all of its nutritional value. Far from it.

Cacao still contains healthy fats, minerals such as magnesium, iron and calcium, fibre, and many beneficial plant compounds after heating. In other words… Heat changes cacao. It doesn’t ruin it. 

What about boiling? 
Here’s where I think the conversation has become a little dramatic. If your saucepan gently reaches a simmer or a few bubbles appear, you haven’t destroyed your cacao. You certainly haven’t turned it into a nutritionally empty drink.

Personally, I love that moment when tiny bubbles begin to appear around the edge of the saucepan. For me, that’s when the aroma deepens. The flavour rounds out. The cacao becomes richer, smoother, sexier and more delicious. It’s my favourite part of the process.

Sometimes I think we’ve become so focused on preserving every last molecule that we’ve forgotten why we drink cacao in the first place. We drink it because it’s delicious.

Because it nourishes us.
Because it helps us slow down.
Because it connects us with ourselves and with each other.

Food isn’t just chemistry.
It’s culture. It’s pleasure.
It’s memory.
It’s community. 

Use a little common sense. 
Imagine telling a chef they should never cook vegetables because heat changes them. Or telling someone they shouldn’t make soup because simmering reduces a few nutrients. It misses the bigger picture.

Food is wonderfully complex. Cacao is no different. Yes, heat changes it. That’s exactly what heat does. But change isn’t always loss.

Sometimes change creates something even more beautiful. Just ask the farmers who ferment cacao. Or the chocolate makers who roast it. Or anyone who’s stood over a saucepan and breathed in the aroma of warming cacao. 

Trust yourself. 
One of the things I hope Mamamuti inspires is that we stop outsourcing our relationship with food.

Think for yourself.
Ask questions.
Stay curious.
Notice what tastes good.
Notice what feels good.
Use a little common sense.

Because no one on the internet gets to decide how you enjoy your cacao. 

A final thought 
Some of the most extraordinary foods in the world have been transformed by heat. Bread. Coffee. Tea. Roasted vegetables. Chocolate. Heat isn’t always the villain. Sometimes it’s part of the magic.

So don’t be afraid to turn up the heat.
Watch for the bubbles. Give it one last whisk. Take a sip. And enjoy every mouthful.

Less fear.
More curiosity.
